BLACKBERRY JAM

What does HOTLIPS do when things don’t go as planned? Make lemons into lemonade. Or, in this case, make JAM. 

The 1,823 pounds of Chester blackberries from Ayers Creek Farm in Gaston, Oregon were sitting on the dock in McMinnville, all ready to be made into HOTLIPS soda. But there was a glitch and the equipment wasn’t ready to make soda. We made 2,842 jars of jam instead. We had always wanted to make jam but hadn’t had the capital, the labor, the retail venue, time wasn’t right. A million excuses. The thought of throwing out all those incredible berries sunk in; wasting the riches of Oregon summer; we couldn’t do that. So we retooled in one minute flat and made blackberry jam. So many great ideas are born this way: no plan, just action, reaction, solution, no time to think, make something good from a bad situation. 

This is no ordinary Blackberry Jam. Take aromatic, juicy berries. Add pure cane sugar. Boil slowly in a vacuum kettle, preserving the very delicate flavors. Most jams are made in an open kettle and much of the flavor is lost. Add nothing else. Every 14 oz. jar contains nearly 3/4 lb. of berries. The flavor of peak summer radiates from every bite. Toast, fresh baguette, cheese, ice cream, served with meats; this jam is so good it works with anything, anytime.
